Casarecce Carbonara

Ingredients
Serves: 6
- 6 cups of casarecce pasta
- 4 oz of parmesan cheese
- 3 tablespoon of minced garlic
- 10 oz of bacon
- 5 egg yolks
- 1 egg
- salt and pepper
- chili flakes
Vegetarian and Cheese Free Substitutions
- 4 oz of nutritional yeast in place of parmesan cheese
- 10 oz of mushrooms in place of bacon
Instructions
- Add your casarecce to 8 cups of boiling water and let it cook for 10 minutes or until al dente.
- Meanwhile, cut your bacon or mushrooms into small pieces, and cook over medium-high heat with minced garlic for 10-15 minutes or until crispy. If substituting with mushrooms, cook them for 5-6 minutes; they should be tender and look lightly browned.
- Drain and reserve 1 cup of your cooking water and place it aside for later use.
- Whisk together your egg yolks, egg, bacon or mushrooms, minced garlic, and rendered fat in a large bowl. Add in your pasta, a cup of the cooking water, and 2 oz of nutritional yeast or ¼ of parmesan cheese and together for about 1-2 minutes or until well combined and creamy.
- Season with sea salt, black pepper, and add crushed chili flakes for heat. Plate and sprinkle with the remaining parmesan cheese or nutritional yeast.
