Casarecce Carbonara

Ingredients

Serves:  6

  • 6 cups of casarecce pasta 
  • 4 oz of parmesan cheese
  • 3 tablespoon of minced garlic
  • 10 oz of bacon
  • 5 egg yolks
  • 1 egg
  • salt and pepper
  • chili flakes
Vegetarian and Cheese Free Substitutions
  • 4 oz of nutritional yeast in place of parmesan cheese 
  • 10 oz of mushrooms in place of bacon
Instructions
  • Add your casarecce to 8 cups of boiling water and let it cook for 10 minutes or until al dente.
  • Meanwhile, cut your bacon or mushrooms into small pieces, and cook over medium-high heat with minced garlic for 10-15 minutes or until crispy. If substituting with mushrooms, cook them for 5-6 minutes; they should be tender and look lightly browned. 
  • Drain and reserve 1 cup of your cooking water and place it aside for later use.
  • Whisk together your egg yolks, egg, bacon or mushrooms, minced garlic, and rendered fat in a large bowl. Add in your pasta, a cup of the cooking water, and 2 oz of nutritional yeast or ¼ of parmesan cheese and together for about 1-2 minutes or until well combined and creamy.
  • Season with sea salt, black pepper, and add crushed chili flakes for heat. Plate and sprinkle with the remaining parmesan cheese or nutritional yeast.
